Yield: 4 Servings

5cButtermilk
2 1/2cFresh milk
  Sugar to taste
  Nutmeg or cinnamon
  Double cream

Warm the buttermilk slightly. Add half the fresh milk, cover and leave to stand for 12 hours. Stir in the remaining milk and leave to stand again until it becomes firmer and gathers a 'hat'. Remove this curd and drain through a real fine sieve. Put into a jelly mould and chill for 30 minutes. Turn out, sprinkle with the sugar and spice and serve with cream.
